1 lb boneless chicken thighs, diced

2 cups cooked jasmine rice

1 cup broccoli florets

1 cup shredded carrots

1/2 cup red bell pepper, sliced

2 green onions, chopped

1 tbsp olive oil

1 tsp garlic powder

Salt and pepper, to taste

1/4 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust to spice preference)

1 tsp sesame oil

Sesame seeds, for garnish

Marinate the Chicken: In a mixing bowl, combine the diced chicken thighs, garlic powder, salt, and pepper. Allow the chicken to marinate for at least 15 minutes.

    Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Add the marinated chicken and cook for about 6-8 minutes, or until browned and cooked through. Remove from heat and set aside.

      Prepare the Vegetables: In the same skillet, add the broccoli and bell pepper. Sauté for 3-4 minutes until just tender. Add the shredded carrots and cook for an additional 2 minutes.

        Make the Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and sesame oil until smooth.

          Assemble the Bowl: In each serving bowl, add a scoop of jasmine rice followed by the sautéed vegetables and cooked chicken. Drizzle the bang bang sauce over the top.
