1 lb chicken breast, diced

1 cup cornstarch

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

2 eggs, beaten

½ cup panko breadcrumbs

2 cups cooked rice (white or brown)

1 cup shredded carrots

1 cup sliced cucumber

½ cup sliced green onions

½ cup chopped cilantro

1 avocado, sliced

Sesame seeds for garnish

For the Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

Prepare the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice. Taste and adjust spice levels as desired. Set aside.

    Coat the Chicken: In a mixing bowl, combine cornstarch, garlic powder, paprika, salt, and black pepper. Toss the diced chicken in the dry mix until evenly coated.

      Dredge the Chicken: Dip the coated chicken pieces into the beaten eggs, then roll them in panko breadcrumbs to create a crispy exterior.
