Ingredients

1 lb boneless, skinless chicken thighs

1 cup cornstarch

2 eggs, beaten

1 cup panko breadcrumbs

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

4 cups cooked jasmine rice

2 cups shredded cabbage (green and red mix)

1 cup sliced cucumbers

1/4 cup chopped green onions

Fresh cilantro for garnish

Lime wedges for serving

Instructions

Prepare the Chicken:

    - Cut the chicken thighs into bite-sized pieces and season with salt, black pepper, garlic powder, and paprika.

      Breading Setup:

        - Create a breading station with three bowls: one with cornstarch, one with beaten eggs, and one with panko breadcrumbs mixed with a pinch of salt.

          Bread the Chicken:

            - Dredge each piece of chicken in cornstarch, shaking off excess. Dip into the beaten eggs, then coat well with panko breadcrumbs.

              Fry the Chicken:

                - Heat about ½ inch of oil in a deep skillet over medium-high heat. Fry the breaded chicken pieces in batches until golden brown and crispy, about 4-5 minutes per side. Drain on a paper towel-lined plate.

                  Make the Bang Bang Sauce:

                    - In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha until smooth. Adjust the heat to your liking by adding more sriracha if desired.

                      Assemble the Bowls:

                        - Divide the cooked jasmine rice among four bowls. Top each bowl with a generous amount of shredded cabbage, crispy chicken pieces, and sliced cucumbers.

                          Drizzle and Garnish:

                            - Drizzle the Bang Bang sauce generously over the chicken and add chopped green onions. Garnish with fresh cilantro and serve with lime wedges on the side.

                              Enjoy!

                                - Mix well and savor the delightful crunch of the chicken paired with the creamy, zesty sauce!
