Ingredients

6 large eggs

1 cup milk (whole or 2%)

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup unsalted butter (melted)

Powdered sugar (for dusting)

Fresh lemon wedges (for serving)

Fresh berries (optional, for topping)

Instructions

Preheat your oven to 425°F (220°C). Place a 9x13-inch baking dish in the oven to heat up.

In a mixing bowl, whisk together the eggs until frothy. Add in the milk, flour, granulated sugar, vanilla extract, and salt. Mix until well combined; some small lumps are okay.

Carefully remove the hot baking dish from the oven. Pour the melted butter into the dish, tilting it gently to coat the bottom evenly.

Immediately pour the pancake batter into the hot buttery dish. Do not stir.

Return the baking dish to the oven and bake for 20-25 minutes or until the pancake is puffed and golden brown around the edges.

Once done, take it out and let it cool for a minute. It will deflate slightly – that’s normal!

Dust with powdered sugar, slice into squares, and serve with fresh lemon wedges and berries, if desired.
