Baked Feta Pasta

200g (7 oz) of pasta (your choice; penne or rigatoni works great)

200g (7 oz) block of feta cheese

2 cups cherry tomatoes, halved

4 cloves garlic, minced

½ cup extra-virgin olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large baking dish, combine the halved cherry tomatoes, minced garlic, and olive oil, stirring well to coat everything evenly.

      Place the block of feta cheese in the center of the baking dish, surrounded by the tomatoes. Drizzle a bit more olive oil over the feta, and sprinkle with dried oregano, salt, and pepper.

        Bake in the preheated oven for about 30 minutes, until the tomatoes are blistered and the feta is soft and golden.

          While the feta and tomatoes are baking, bring a pot of salted water to boil and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta.

            Remove the baking dish from the oven, and using a fork, mash the baked feta and tomatoes together until creamy and well combined.

              Add the cooked pasta directly into the baking dish, tossing to combine all ingredients. If needed, use the reserved pasta water to loosen the sauce to your desired consistency.

                Taste and adjust seasoning with salt and pepper if necessary.

                  Serve immediately, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
