Baked Feta Pasta

1 block (8 oz) feta cheese

2 cups cherry tomatoes, halved

4 cloves garlic, minced

½ teaspoon crushed red pepper flakes (adjust to taste)

½ teaspoon dried oregano

¼ cup olive oil

12 oz pasta (penne, rigatoni, or your choice)

Salt and black pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a 9x13 inch (or similar size) baking dish, add the halved cherry tomatoes and minced garlic. Drizzle with olive oil, and sprinkle with crushed red pepper flakes, dried oregano, salt, and black pepper. Toss to combine.

      Add the Feta: Place the block of feta cheese in the center of the tomatoes. Drizzle a little extra olive oil over the feta and season with a pinch of salt and black pepper.

        Bake: Bake in the preheated oven for about 30 minutes, until the tomatoes are blistered and the feta is soft and slightly golden.

          Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions in a large pot of salted boiling water. Reserve ½ cup of the pasta cooking water, then drain the rest.

            Combine: Remove the baking dish from the oven. Using a fork, mash the baked feta and tomatoes together to create a creamy sauce. If the sauce is too thick, gradually mix in the reserved pasta cooking water until you reach your desired consistency.

              Mix with Pasta: Add the drained pasta directly to the baking dish, and toss to combine thoroughly, ensuring the pasta is coated in the sauce.

                Garnish and Serve: Serve hot, garnished with freshly torn basil leaves and grated Parmesan cheese if desired.
