Dumplings:

2 cups all-purpose flour

1/2 cup boiling water

1/2 lb ground pork

1/4 cup chopped green onions

1 tablespoon soy sauce

1 teaspoon sesame oil

1 teaspoon minced garlic

1 teaspoon minced ginger

Salt and pepper to taste

Soup:

4 cups chicken or vegetable broth

1 tablespoon soy sauce

1 tablespoon chili oil (adjust to taste)

1 tablespoon rice vinegar

1 teaspoon miso paste (optional)

1 cup bok choy, chopped

1/2 cup mushrooms, sliced (shiitake or button)

Fresh cilantro, for garnish

Sliced red chili, for garnish (optional)

Lime wedges, for serving

Instructions
 

Make the Dumpling Dough:

    - In a bowl, combine flour and boiling water. Mix until a dough forms.

      - Knead for about 5 minutes until smooth, then cover with a damp cloth and let rest for 30 minutes.

        Prepare the Filling:

          - In a mixing bowl, combine ground pork, green onions, soy sauce, sesame oil, garlic, ginger, salt, and pepper. Mix well.

            Assemble Dumplings:

              - Divide the rested dough into small pieces (about the size of a golf ball).

                - Roll out each piece into thin circles (about 3 inches in diameter).

                  - Place a teaspoon of filling in the center, then fold the dough over and pinch the edges to seal tightly. Repeat until all dough and filling are used.

                    Prepare the Soup:

                      - In a large pot, combine the broth, soy sauce, chili oil, rice vinegar, and miso paste (if using). Bring to a simmer over medium heat.

                        Add Vegetables:

                          - Once simmering, add the bok choy and mushrooms to the broth. Cook for about 2-3 minutes until the vegetables are tender.
