4 medium russet potatoes, peeled

1 small onion, finely grated

2 large eggs

1/4 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon ground black pepper

1/4 teaspoon baking powder

Vegetable oil for frying

Applesauce or sour cream, for serving

Instructions
 

Grate the Potatoes: Using a box grater or food processor, grate the peeled potatoes. Place the grated potatoes in a clean kitchen towel and twist to squeeze out excess moisture.

    Mix the Ingredients: In a large bowl, combine the grated potatoes, finely grated onion, eggs, flour, salt, pepper, and baking powder. Stir until well combined.

      Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat. To test if the oil is hot enough, drop a small amount of the potato mixture into the oil; it should sizzle immediately.

        Fry the Pancakes: Scoop about 1/4 cup of the potato mixture and flatten it slightly to form a pancake. Carefully place it in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Add more oil if necessary between batches.

          Drain Excess Oil: Once cooked, transfer the pancakes to a paper towel-lined plate to drain any excess oil.

            Serve: Serve warm with applesauce or a dollop of sour cream.
