1 lb boneless, skinless chicken breast, cut into 1-inch cubes

2 tablespoons olive oil

Zest and juice of 1 lemon

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

1 bell pepper, cut into squares

1 onion, cut into squares

Bamboo or metal skewers

Instructions
 

In a large bowl, combine olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and pepper.

    Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 20 minutes (or up to 2 hours for more flavor).

      While the chicken is marinating, soak bamboo skewers in water (if using) to prevent burning while grilling.

        Preheat the grill to medium-high heat.

          Thread the marinated chicken, bell peppers, and onion alternately onto the skewers.

            Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
