8 oz. spaghetti or linguine

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, roughly chopped

Zest of 1 lemon

Juice of 1 lemon

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish (optional)

Extra lemon wedges for serving (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the rest.

    Sauté Garlic: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant and slightly golden.

      Add Spinach: Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Stir occasionally to ensure even cooking.

        Combine Ingredients: Reduce the heat to low and add the cooked pasta to the skillet. Pour in the reserved pasta water (start with 1/4 cup, adding more as necessary for desired consistency) along with lemon zest and lemon juice.

          Mix in Cheese: Stir in the grated Parmesan cheese until melted and everything is well combined. Season with salt and pepper to taste.

            Serve: Plate the pasta and garnish with fresh basil, an extra sprinkle of Parmesan, and lemon wedges if desired. Serve immediately.
