10 minute Chili Oil Udon Noodles

200g fresh udon noodles

2 tablespoons chili oil (store-bought or homemade)

1 tablespoon soy sauce

1 teaspoon sesame oil

1 garlic clove, minced

1 inch ginger, grated

2 green onions, sliced (white and green parts separated)

1 cup vegetables (such as bell peppers, bok choy, or snap peas), thinly sliced

1 tablespoon toasted sesame seeds

Salt and pepper to taste

Optional: Soft-boiled egg for topping

Cook Udon Noodles: Bring a pot of salted water to a boil. Add the udon noodles and cook according to package instructions, usually about 3-4 minutes for fresh noodles. Stir occasionally to prevent sticking.

    Prepare Flavor Base: While the noodles are cooking, heat chili oil in a large skillet over medium heat. Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant (do not burn).

      Add Vegetables: Toss in the white parts of the green onions and your choice of sliced vegetables to the skillet. Sauté for about 1-2 minutes or until they are slightly tender but still crisp.

        Combine Noodles: Once the udon noodles are cooked, drain and add them directly into the skillet. Pour in soy sauce and sesame oil. Toss everything together for 1-2 minutes, ensuring the noodles are well-coated in the chili oil mixture. Add salt and pepper to taste.
